Our smoked bresaola has been made using an age – old Dutch recipe. Premium beef topside is hand selected, dry salted and aged until it takes on a characteristically intense res wine hue and succulent texture. At this point the beef is gently cold smoked to retain its subtle, concentrated intensity of flavour and aroma. Smoked bresaola can be served finely shaved and folded throughout summer salads or wintery vegetables with the freshest of white or grain breads. Add a generous handful of slices to a platter of pickled peppers, cucumbers and piquant cheeses.
